Over the past 12 months, the Covid-19 pandemic forced retailers to adjust their offering and digitise their business as lockdown took effect. For some, it was about creating a new online offering that had previously never existed. For others, grocers had updated and optimised their current online presence to deal with rapid demand. CIM's Scotland chair, Ellie Murphy, recently spoke to Retail Gazette about whether the future of the grocery industry will change forever as a result of the pandemic.
